Pale yellow in color with greenish reflections. On the nose: green apples, orange zest, notes of white fruits, flowers, herb cuttings, and brioche toast. On the palate it is fresh, revealing a great balance of sweetness, and acidity. Fine and elegant bubbles. More than 20 months ageing in the cave. All process during aging on the lees is done manually, and second fermentation and aging is under cork. All riddling and disgorging is also done by hand.
