This is our first barrel from Wilderness Trail, and we can already tell that there will be plenty more to come in the future. The nose holds notes of red-licorice, anise, cinnamon-sugar, and lots of char. The first sip is noticeably chewy for a four year old cask strength bourbon. Notes of rich berries, vanilla extract, toasted wood and butter, all start off on the hotter side, but then softer flavor notes pull through toward the end. The finish is pleasant with more red fruit notes coming back to the top. Overall, this high-rye mashbill is definitely one of our favorites.
